Amontillado

A sherry.

Amontillado is a Spanish dry sherry with an amber color and nutty aroma. It has a strength of 16-17%. The drink is a type of sherry that developed between fino and oloroso.

How it is made

Amontillado is a type of sherry. It is made by adding alcohol to fino, which kills the yeast layer and allows the wine to age in contact with oxygen. This process gives it a darker color and a higher alcohol content.

History

The name means "in the style of Montilla." The name comes from the city of Montilla, where the technique of aging wine after the yeast layer died was invented. Edgar Allan Poe published a story titled "The Cask of Amontillado" in 1846.
