Feni is a traditional Indian spirit produced primarily in Goa. It is made from the sap of coconut palms or the fruit of cashew trees and typically has an alcohol strength of 42%.
How it is made
Traditionally, cashew fruits are crushed on a stone, allowing the juice to flow through a special groove into a vessel buried in the ground. The collected juice is then clarified in clay or copper pots. The clarified juice is boiled in a large pot over wood fuel for a continuous distillation process that lasts for 8 hours.
Types and styles
Feni comes in three varieties: Arrak is the product of the first distillation and considered a lower grade. Casulo results from the second distillation and has moderate strength. The highest grade, Feni, undergoes a third distillation and reaches 42% alcohol content.
