Țuică is a traditional Romanian fruit brandy made exclusively from plums. It is Romania's national drink, usually containing 40-55% alcohol by volume.
How it is made
Țuică is prepared from plums that are left to ferment for 6-8 weeks in large barrels. Distillation is done in a copper still using traditional fire sources like wood or charcoal. The process yields two grades: normal (distilled once, 24-40% alcohol) and very strong (distilled twice, 50-65% alcohol). After distillation, țuică may be aged between six months and ten years in mulberry barrels or consumed immediately.
History
Țuică is considered Romania's national drink and has been traditionally prepared after winemaking is complete in early summer. Romania is the largest plum producer in the European Union, with approximately 65,000 hectares cultivated with plum trees. The drink is deeply rooted in Romanian culture and traditions.
Types and styles
According to Romanian law, țuică is defined as an autochthonous product made only from plums and found exclusively in Romania. Different classifications exist based on aging duration, including old, selected, and superior varieties. The terms "horincă" and "turț" are used in northern Transylvania as synonyms for țuică.
How it is served
Țuică is typically consumed before meals, served in shot-sized amounts and sipped slowly. It is commonly used for toasts at traditional celebrations such as weddings, baptisms, and religious holidays. In rural Romania, it is often preferred over wine for toasts and is sometimes used as part of informal remuneration for favors.
