Toso is a spiced sake traditionally consumed during New Year celebrations in Japan. It is made from sake infused with various spices including sichuan pepper, cinnamon, dried ginger, and other herbs.
History
The tradition of drinking toso during New Year began during the Tang dynasty in China and was adopted by Japanese aristocrats during the Heian period. It is believed that drinking toso ensures good health in the coming year.
How it is made
The recipe is said to have been invented by the famous Chinese physician Hua To during the Three Kingdoms period. The composition has changed over time, but now typically includes sichuan pepper, cinnamon, dried ginger, and many other herbs.
How it is served
Toso is served in three different sized cups called 'sakazuki' that are passed around in a circle. Traditionally, cups were passed from younger to older family members, but in modern Japan, the head of the family typically drinks first.
