Zivania is a traditional pomace brandy from Cyprus, made from the pomace of Mavro and Xynisteri grape varieties mixed with dry wine. It typically has an alcohol strength of 45-49%.

How it is made

Zivania is produced by distilling a mixture of grape pomace with water. The distillation process is slow, and the resulting spirit is often enhanced with additions like cinnamon, basil, fig seeds, or honey to improve its flavor and aroma.

History

Zivania production began in Cyprus in the late 15th century. Its name derives from the Cypriot Greek word 'zivana,' meaning grape pomace, not from a grape variety as sometimes mistakenly believed. Since Cyprus joined the EU in 2004, the name and production method of Zivania have been protected under EU regulations.

How it is served

In Cyprus, Zivania is typically served with ice as part of a meze meal, and also with dried fruits and nuts. It is also used for medicinal purposes, including treating wounds, toothaches, and as a cold remedy.
