Corn whiskey is a distilled spirit primarily made from corn. It must contain at least 80 percent corn in its mash and can be distilled up to 80 percent alcohol by volume.

How it is made

Corn whiskey follows a traditional mash process under federal alcohol laws. Unlike moonshine, no sugar is added to the mash. When aged, it must be kept in uncharred or previously used oak barrels at less than 62.5% alcohol by volume.

Types and styles

Straight corn whiskey is a variety aged in uncharred oak containers for two years or more. Whiskeys that have been aged for at least four years can be labeled bottled in bond if they satisfy extra conditions. Many corn whiskeys are produced by smaller distillers throughout the United States.
