Swindler Sour

Made with grappa, soju and liqueur, served in a cocktail glass.

20 ml / 3/4 ozGrappa
20 ml / 3/4 ozSoju
3 mlYuzu liqueur
15 ml / 1/2 ozSugar syrup
20 ml / 3/4 ozLime juice
1 mlOrange blossom water
1 mlSalt tincture
30 ml / 1 ozQuail egg white
1Chrysanthemum
5 gThyme
200 gIce cubes

Method

  1. Add quail egg white, lime juice, sugar syrup, and yuzu liqueur to a shaker and dry shake.
  2. Add orange blossom water, salt tincture, Soju, and Grappa to the shaker.
  3. Add ice and shake again.
  4. Strain into a chilled cocktail glass.
  5. Garnish with chrysanthemum and thyme.
