Malibu is a coconut-flavored rum-based liqueur produced in Barbados. It contains 21% alcohol by volume and is known for its sweet coconut taste.
How it is made
Malibu is made by refining Barbadian rum to remove harsh flavors using molasses, then adding coconut extract and sugar. The original Malibu has a clear color despite common misconceptions about it being white.
History
Malibu was first mixed and bottled in the 1980s. Initially produced on Curaçao with fruit spirits, rum, and coconut extract, it was simplified for bartenders to use in Piña Coladas. Production later moved to Jamaica with improved ingredients before being owned by Pernod Ricard.
Types and styles
The original Malibu has a sweet coconut flavor. The brand offers many varieties with tropical fruit flavors like banana, pineapple, passion fruit, melon, and mango. Other versions include mint (Malibu Fresh), tequila-based (Malibu Red), and a stronger version called Malibu Black at 35% alcohol.
How it is served
Malibu can be served neat or with ice, but is most commonly used in cocktails. It's often used as a substitute for coconut milk in Piña Coladas. On this site, you can find it in cocktails like Cojito, 151 Florida Bushwacker, Grand Blue, Radioactive Long Island Iced Tea, Rum Runner, and Space Odyssey.
