Mijiu is a Chinese rice wine made from fermented rice. It is a sweet, clear beverage with an alcohol content of 12-20%, originating from China and Taiwan.

How it is made

Mijiu is made by fermenting rice, making it a type of huangjiu or 'yellow wine'. It is similar in appearance and taste to Japanese sake. The wine can be used for cooking, with kitchen versions often being of lower quality and containing salt.

Types and styles

A stronger distilled version called mibaijiu is produced by distilling mijiu. An unfiltered type containing whole sticky rice grains is called jiu'nian or lao'zao.

How it is served

Mijiu is typically served warm, similar to Japanese sake. It is also commonly used as an ingredient in cooking.
