Advocaat is a Dutch liqueur made from brandy, egg yolk, and sugar. It has a smooth, uniform, velvety texture and typically contains 14-20% alcohol.
How it is made
Advocaat is made by blending egg yolks with brandy and sugar. Some recipes include milk. The mixture is passed through a filter to obtain a uniform consistency before being bottled.
History
According to legend, Advocaat was first made in Brazil. Local people created a drink using honey, alcohol, spices, and avocado. When Portuguese colonists couldn't grow avocados in Europe, they replaced the fruit with egg yolks, added brandy and sugar to create a similar drink. The name evolved from the Portuguese word for avocado to the Dutch word for lawyer.
How it is served
Advocaat is so thick that it needs to be served with a spoon. It is used in mixed drinks, including the cocktail 'Snowball' with lemonade and optionally lime juice. It can also be mixed with milk. In East Germany, it was used to make a dessert with ice cream.
