Canelazo is a hot alcoholic beverage made from aguardiente (sugarcane spirit), sugar or panela, and cinnamon water. It typically has a high alcohol content as it is based on aguardiente.
How it is made
The traditional recipe combines aguardiente with sugar or panela and cinnamon water. Many variations exist, including those with fruit juices such as naranjilla, blackberry or passion fruit, and sometimes with cloves. Some versions are made non-alcoholic.
History
Canelazo originates from Colombia but has been consumed throughout the Andes for a long time. In Ecuador, it is commonly sold by street vendors during festivals, especially during the Fiesta Quito (celebrating the founding of Quito) and Christmas.
How it is served
In the northern highlands of Peru, particularly in the Ayabaki area of Piura, Canelazo is made with aguardiente, sugar or chancaca sauce, cinnamon water, and sometimes lemon and corn beer chicha de jora.
