About the Bijou

The Bijou is a short drink made with equal parts gin, sweet vermouth, and green Chartreuse. The drink gets its name from the three jewel-colored ingredients.

History

Harry Johnson invented the Bijou in the 1890s. He named the drink for the colors of its ingredients. Dale DeGroff rediscovered the recipe in the 1980s.
