About the Gibson
The Gibson is a dry, short drink similar to a martini but with a distinctive savory garnish. It combines the botanical notes of gin with the herbal complexity of dry vermouth, finished with a pickled onion.
History
The Gibson's exact origin is unclear. Early recipes from 1908 differ from modern versions, which use an onion garnish. Popular theories attribute its creation to either Charles Dana Gibson in New York or Walter D. K. Gibson at San Francisco's Bohemian Club in the 1890s.
