Banana beer is an alcoholic beverage made by fermenting banana puree. It originates from East Africa and has an alcohol by volume of approximately 3 to 6 percent.
How it is made
The beer is produced from ripe East African Highland bananas. Sorghum, millet, or cornmeal is added as a source of wild yeast. The bananas are peeled and mashed into a soft pulp. The juice is filtered and diluted with water. The grain is crushed, lightly roasted, and mixed into the juice. The mixture ferments for 24 hours and is then filtered.
Types and styles
It is known by different names in various regions. In Kenya it is called urwaga, in the Democratic Republic of the Congo it is called kasiksi, and in Uganda it is called mubisi. Another similar product made in Uganda is called mwenge.
