Pearl Diver

Made with rum and bitters.

45 ml / 1.5 ozGold rum, Puerto Rican/Cuban style
15 ml / 0.5 ozDemerara rum, Lemon Hart
15 ml / 0.5 ozLime juice
15 ml / 0.5 ozOrange juice
5 ml / 0.25 ozHoney
5 ml / 0.25 ozButter, See note
1 dashcinnamon syrup, 1/4 teaspoon
1 dashDonn's spices #2
1 dashBitters, Angostura
120 ml / 4 ozCrushed ice

Method

  1. Blend all ingredients with crushed ice at high speed for 20 seconds.
  2. Strain through wire-mesh strainer into a tall glass.
  3. Top with more ice.
