The Way Ahead

Made with rum, light beer and Angostura bitters, served in a rocks glass.

60 ml / 2 ozDark rum
45 ml / 1 1/2 ozLight beer
2 mlAngostura bitters
15 ml / 1/2 ozSugar syrup
30 gPrune
24 gDried apricot
300 gIce cubes
1Ice sphere

Method

  1. Place an ice sphere in a rocks glass.
  2. Muddle 2 dried apricots and 2 prunes in a mixing glass.
  3. Add 60 ml dark rum and let it infuse for 1 minute.
  4. Add 15 ml sugar syrup and 2 dashes of Angostura bitters.
  5. Fill with ice cubes and stir, then strain into the rocks glass.
  6. Top with light beer and garnish with apricot and prune on a skewer.
