Prošek

A wine.

Prošek is a traditional sweet dessert wine from southern Dalmatia in Croatia. It is made from late-harvested white grapes that are dried on the vines, resulting in a wine with at least 15% alcohol content.

How it is made

Prošek is produced using the ancient 'passito' method, where grapes are left to dry on the vines. This process concentrates the sugars and flavors. The wine is made from traditional Dalmatian white varieties like Bogdanuša, Maraština, and Vugava, with premium versions blending these with the red Plavac Mali variety.

History

The origin of the name Prošek is uncertain but may relate to the Croatian word 'prošli' meaning 'last,' referring to the late harvest of grapes used. Despite the similar name, Prošek has no connection to Prosecco, as they differ in production method, style, and grape varieties.

Types and styles

Prošek comes in different styles, with premium versions being more expensive due to requiring approximately seven times more grapes than regular Dalmatian wines. All Prošek must have a minimum alcohol content of 15% to be certified.
