The Tower of Power Sour

Made with bourbon whiskey, served in a sour glass.

50 ml / 1 3/4 ozBourbon whiskey
12.5 ml / 1/2 ozSugar syrup
25 ml / 3/4 ozLemon juice
25 ml / 3/4 ozQuail egg white
10 gCranberry jam with port
200 gIce cubes

Method

  1. Combine quail egg white, lemon juice, sugar syrup, and bourbon in a shaker.
  2. Add cranberry jam and shake without ice.
  3. Fill shaker with ice and shake again.
  4. Strain through a strainer and fine mesh into a sour glass.
