Good Will Hunting

Made with vodka and liqueur, served in a sling glass.

40 ml / 1 1/4 ozVodka
20 ml / 3/4 ozLychee liqueur
10 ml / 1/4 ozSugar syrup
30 ml / 1 ozLemon juice
25 ml / 3/4 ozQuail egg white
60 gLychee puree
15 gLychee
5 gRaspberry
1 gBlack pepper ground
350 gIce cubes

Method

  1. Fill a sling glass with ice cubes.
  2. Place lychee puree in a shaker.
  3. Add quail egg white, lemon juice, sugar syrup, lychee liqueur, and vodka.
  4. Fill the shaker with ice cubes and shake well.
  5. Strain the mixture into the sling glass.
  6. Garnish with peeled lychee, raspberry, and a pinch of ground black pepper.
