Schindler's List

Made with vodka and liqueur, served in a highball glass.

50 ml / 1 3/4 ozVodka
15 ml / 1/2 ozPeach liqueur
15 ml / 1/2 ozOrange juice
15 ml / 1/2 ozLemon juice
7.5 ml / 1/4 ozLime juice
10 ml / 1/4 ozStill water
25 ml / 3/4 ozQuail egg white
60 gPeach
120 gPineapple
100 gCranberry
1 gMint
10 ml / 1/4 ozHoney
10 gGinger root
400 gIce cubes

Method

  1. Fill a highball glass with ice cubes.
  2. Blend pineapple, peach, and cranberry, then strain into a shaker.
  3. Add vodka, peach liqueur, lemon juice, and ice to the shaker, shake gently.
  4. Strain the mixture into the highball glass.
  5. Add egg white, honey, ginger, lime juice, orange juice, and water to a siphon, charge and shake 3-4 times.
  6. Top the cocktail with the foam and garnish with mint.
