Busby’s Bore

Made with amaro, served in a rocks glass.

20 ml / 3/4 ozAmaro
15 ml / 1/2 ozLemon juice
30 ml / 1 ozSoda water
15 gLemon
20 gRhubarb
3 gMint
20 ml / 3/4 ozHomemade citrus oil
200 gIce cubes
1Ice cube

Method

  1. Extract juice from 20g of rhubarb.
  2. Add ice to a rocks glass.
  3. Combine rhubarb juice, lemon juice, citrus oil, and Amaro in a shaker.
  4. Fill shaker with ice and shake thoroughly.
  5. Strain into the rocks glass.
  6. Top with soda water.
  7. Garnish with a lemon slice and mint sprig.

About the Busby’s Bore

A short sour cocktail made with Amaro, rhubarb, and citrus. It has a refreshing, acidic character with vegetable notes.
