Dunmore Cobbler

Made with sherry, Scotch whisky and bitters, served in a collins glass.

60 ml / 2 ozAmontillado sherry
30 ml / 1 ozPineapple syrup
15 ml / 0.5 ozBlended Scotch
15 ml / 0.5 ozLemon juice
3 dashesBitters, Angostura
1 wedgePineapple, as garnish

Method

  1. Shake all ingredients except garnish with ice.
  2. Strain into a Collins glass over crushed ice.
  3. Top with bitters and garnish with pineapple wedge.
