About the John Collins

The John Collins is a tall Collins cocktail with a Genever base. It offers a balanced sour character from the lemon juice and sweetness from the simple syrup, topped with soda water for effervescence.

History

The John Collins dates back to at least 1869, possibly originating with a headwaiter named John Collins who worked at Limmer's Old House in London. It is essentially a variant of the Tom Collins, with earlier versions likely using Dutch gin instead of London dry gin.
