The Thing

Made with rum and liqueur, served in a highball glass.

40 ml / 1 1/4 ozWhite rum
20 ml / 3/4 ozApricot liqueur
20 ml / 3/4 ozHoney syrup
100 ml / 3 1/2 ozSoda water
90 gPassion fruit
1Pineapple leaves
2 gMint
380 gIce cubes

Method

  1. Place mint in a highball glass, fill with ice cubes.
  2. Add passion fruit pulp to a shaker with honey syrup, apricot liqueur, and white rum.
  3. Fill shaker with ice, shake well.
  4. Strain into highball glass, top with soda water.
  5. Gently stir, garnish with mint and pineapple leaves.
