Pisco is a strong spirit made from distilled grape wine. Originating in Peru, it typically has an alcohol content of 43%.

History

The name comes from the Pisco Valley in Peru, where Spanish colonists introduced grape cultivation after finding indigenous people making a corn-based alcoholic drink. Chile later began producing their own version during the 19th century, leading to a dispute between the countries over the name and production methods. In 2007, Peru declared the Pisco Sour cocktail a national heritage.

How it is made

Peruvian Pisco is made from pure, freshly fermented grape wine without skins or seeds, distilled once to 43% alcohol. No water can be added. Chilean Pisco differs by having water added to reduce alcohol content and being aged in oak barrels.

How it is served

Pisco is the base for several cocktails including Pisco Sour, Pisco Punch, Parmigiano Sour, El Niño, Capitano, Carnivore, Dope Slap, Steam Drunk, 5 Wise Men, Callao, Double Grape, Double Punch, Duchamp's Punch, Fitzcarraldo, and Lima Sour.
