Islay single malts are Scotch whiskies produced on Islay, one of Scotland's five protected whisky regions. These whiskies are known for their distinctive peat smoke aroma and are made from malted barley, typically with an alcohol content of 40-60% ABV.

How it is made

Islay single malts are made using malted barley that is often dried over peat fires, giving the whisky its characteristic smoky flavor. The water used comes from local sources, which also contributes to the unique taste profile. The whisky is then distilled and aged in casks, traditionally sherry casks, though bourbon casks from the U.S. are now also commonly used.

History

Whisky production on Islay dates back possibly to the early 1300s, with Irish monks believed to have been the first to distill there. Many of the island's distilleries began as small, illegal operations during the 17th century, with distillers hiding from excise men in secluded glens and caves. The industry has grown significantly, with ten active distilleries now operating on the island.

Types and styles

Islay whiskies vary by distillery location. Southern distilleries like Laphroaig, Lagavulin, and Ardbeg produce heavily peated whiskies with medicinal, iodine, seaweed, and salt notes. Northern distilleries like Caol Ila also make strongly peated whisky. Bunnahabhain produces lighter, lightly peated whiskies, while Bowmore creates a balanced whisky with medium peating and sherry-cask maturation. The island's maritime climate and unique peat contribute to the overall pungent, smoky, and oily flavors with hints of sea air.

How it is served

Islay single malts are typically served neat to appreciate their complex flavors. They are also featured in various cocktails including Penicillin, The Smoking Gun, Drunk Uncle, and Black Rock, among others. The smoky character of these whiskies makes them particularly well-suited for cocktails that can complement or contrast with their distinctive profile.
